Easy Vegan Cabbage Stew with Potatoes

A simple, one-pot vegetable stew made with cabbage, potatoes, and carrots — humble ingredients, comforting and ready in under an hour.

Ingredients
  

  • 1 medium onion finely chopped
  • 1.8 oz (50 g) celery root, finely diced
  • 14 oz (400 g) cabbage, finely chopped
  • 4 medium potatoes peeled and cut into bite-size pieces
  • 1 bell pepper chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon vegetable oil
  • Paprika to taste
  • Salt to taste
  • Black pepper to taste
  • 1 small bunch of fresh dill
  • cups (1 liter) of water (more if needed)

Instructions
 

  • Heat the oil in a large pot over medium heat.
  • Add the onion and celery root and sauté until the onion begins to soften.
  • Add the cabbage and bell pepper. Stir everything together and cook for about 5 minutes, stirring occasionally, until the cabbage begins to soften.
  • Add the potatoes.
  • Add enough water to cover the vegetables.
  • Bring to a gentle boil, then reduce the heat, cover, and simmer.
  • About 10 minutes before the end of cooking, stir in 1 tablespoon (15 g) of tomato paste, paprika, salt, dill and black pepper.
  • Continue simmering until the potatoes and cabbage are completely tender, about 30 minutes total cooking time.
    If you'd like a slightly thicker consistency, simmer it uncovered for a few additional minutes to allow some of the liquid to evaporate.
  • Check the potatoes with a fork toward the end of cooking. They should be tender but not falling apart.
  • Taste and adjust the seasoning before serving.

Notes

 

Add the tomato paste near the end

Don't add the tomato paste at the beginning of cooking.
Because tomato paste is acidic, adding it too early can slow the softening of some vegetables. For this recipe, I recommend stirring it in during the last 10 minutes of cooking, once the potatoes and cabbage have had plenty of time to become tender.
 

Season gradually

I prefer to let the vegetables cook before making the final seasoning adjustment. The flavor develops as the stew simmers, so taste it toward the end and add more salt, pepper, or paprika if needed.
 

Adjust the water to your preference

The amount of water determines whether the finished dish feels more like a thick vegetable stew or a lighter soup.
Start with 4¼ cups (1 liter) and add a little more if you prefer more broth.
