Cuisine American
- 4 cups 360 g gluten-free rolled oats
- 1½ cups puffed amaranth approximately 10 g; verify package weight
- 1 cup puffed quinoa approximately 10 g; verify package weight
- ¼ cup approximately 40–48 g chia seeds
- ¼ cup approximately 35–40 g flaxseeds
- ½ cup 65 g raw pumpkin seeds
- ½ cup 70 g chopped raw almonds
- ¼ cup 60 ml maple syrup
- 3 tbsp 45 ml extra virgin coconut oil, melted
- ½ cup 65–75 g mixed dried fruits, such as goji berries, raisins, or finely chopped dried apricots
Preheat the oven. Preheat your oven to 175°C (350°F). Line a large baking tray with parchment paper.
Combine the dry ingredients. In a large mixing bowl, add the gluten-free oats, puffed amaranth, puffed quinoa, chia seeds, flaxseeds, pumpkin seeds, and chopped almonds. Mix until evenly combined. Add the wet ingredients. Pour the maple syrup and melted coconut oil over the dry mixture. Stir thoroughly until all the ingredients are lightly coated. Spread the granola. Transfer the mixture to the prepared baking tray, spreading it into a thin, even layer. Use two trays if necessary to avoid overcrowding.
Bake for 25 minutes. Bake at 175°C (350°F) for approximately 25 minutes, checking after 10–15 minutes. The granola should be lightly golden and fragrant. Remove it earlier if the delicate puffed grains or seeds begin to brown too much.
Remove the granola from the oven.
Add the dried fruits. Mix in the goji berries, raisins, or other chopped dried fruits. Let it cool completely.
Store and enjoy. Transfer the granola to an airtight container. Serve with yogurt, milk, or fresh fruit.
Recipe Notes
- For crunchy clusters: Press the granola gently onto the baking tray and avoid stirring while it cools.
- For extra flavor: Add 1 teaspoon of cinnamon or ½ teaspoon of vanilla extract before baking.
- For better flaxseed nutrient availability: Use freshly ground flaxseeds instead of whole seeds.
- For a protein-rich breakfast: Serve with plain Greek yogurt or unsweetened high-protein soy yogurt.
- For gluten-free granola: Use certified gluten-free oats and check the packaging of the puffed grains and dried fruits.
- Storage: Store completely cooled granola in an airtight container in a cool, dry place. For the best quality, enjoy within 1–2 weeks.
